1. 8 areas, 5 you already start with
The model behind the checklist splits a venue into eight recognisable parts of the building: the dining room, the kitchen, the bar, the terrace, the takeaway and delivery corner, the cellar or storeroom, the guest and toilet areas, and the till. Five of those exist in practically every venue — dining room, kitchen, bar, guest areas and till are switched on by default.
The three switched OFF by default — terrace, takeaway and cellar — are exactly the three that differ most from one venue to the next. A lunch counter with no terrace never has to think about it; a summer terrace with eight tables adds three tasks of its own to the round, and as step 5 shows, those aren't the cheapest three to forget.
2. 34 jobs, and 12 of them have to match twice
Across all eight areas, the model tracks 34 separate jobs. Twelve of them form a PAIR: an action that switches something on in the morning and has to be reversed, specifically, at night. The door that unlocks and has to be locked. The lights and the heating, on and off. The tables that go out and come back in. The kitchen equipment and the extraction hood, on and off. The coffee machine, on and off. The terrace furniture and the terrace heaters, out and back in / off respectively. The delivery platforms, switched on and paused. The till float, counted at open and counted again at close.
A pair that's only half-ticked is exactly what this model is built to catch: something switched on in the morning that nobody realises, by evening, is still running. 3. 23 and 23 — the same length, never the same list
Count every task for a venue with all eight areas switched on, and something worth noticing happens: the opening round comes to 23 tasks, and so does the closing round — exactly the same number. That isn't a coincidence or a trick; it falls straight out of how the twelve pairs and the two sets of eleven single-sided tasks split across the two rounds.
That exact equality is what makes a closing round dangerous to improvise: if both rounds are the same length, it's tempting to assume they're the same list, just run backwards. They aren't — and that's exactly what the next number shows.

The opening round starts at the door and ends at the till. The closing round starts at the delivery channels and ends, right at the very end, back at that same door.
4. Job 1 against job 24: the door opens the night AND closes it
The opening round starts by unlocking the door and turning the key — that's job 1. The closing round doesn't start at that same door; it starts by pausing the delivery platforms and switching off the takeaway printer. The channels to the outside world close first, well before anyone thinks about the terrace or the till.
And the door? It comes back right at the end of the closing round — the very last job, after the till, after the lights, after the heating. The night opens and closes on the same door, in a completely different order around it: proof that a closing round is never just the opening round read backwards. That's exactly why the model gives the closing round its own order instead of reusing the opening one in reverse.
5. 3 jobs, and they belong to the terrace
Of the eight areas, one is singled out by name in the model's own source as "the single most expensive thing to forget": the terrace. Three jobs — cleaning at open, furniture out and back in, heating on and off — two of which form a pair. Drop that pair at close, and something burns all night that nobody sees.
A gas patio heater typically burns somewhere between €1.20 and €3.00 an hour, depending on the model and the local gas price. Run that for 2 heaters left on for 14 hours until the venue reopens the next day, and one forgotten evening costs €56 — or €2,912 a year if it happens just once a week. Not a dramatic figure on its own, but exactly the kind of cost that never shows up on an invoice labelled "patio heater left on" — it just disappears into the general energy line.
6. 5 to 7 times more energy than an average commercial building — and the calculator
A restaurant kitchen isn't an office with a fryer bolted on: per the US EPA's ENERGY STAR figures for the sector, a restaurant uses 5 to 7 times more energy per square foot than the average commercial building — mostly from equipment left running at full tilt whether or not anything is actually cooking. That's a US-sourced figure, but the ratio — not the dollar amount — is exactly why a venue that's careless with equipment feels it faster than almost any other type of business.

7. 60% — what one tick at the extraction hood is worth
An extraction hood left running at full power at night simply because nobody's thinking about it any more is exactly the kind of waste demand-controlled ventilation systems exist to fix — systems that scale the extraction rate to what's actually cooking. Field studies cited by the EPA's ENERGY STAR programme point to savings of 60% or more compared with a hood running flat out continuously — the number that makes skipping that one task expensive.
